Butternut is probably a little smoother/creamier, more of a nutty sweet. Sugar pumpkin has a wee bit more texture which would be nice with the whole grains (regular pumpkin is too much texture!) and more sweet without the nutty. Acorn would be drier and way more texture, and nutty without the sweet. Australina blue pumpkin would be awesome! Hubbard would be nutty, similar texture to sugar pumpkin.
